Coming from a newer cooperative operating in western Honduras called APROCACERCHIL, this coffee is grown by over 170 small-farms that prioritize environmentally-friendly and sustainable processing techniques. Cherries are floated for quality in recycled water, washed in a demucilager (which uses very little water), and dried in mechanical guardiolas that are fueled by burning recycled coffee parchment. The cooperative also works with a local fertilizer plant to make an organic fertilizer using the remaining coffee parchment - 3000lbs of fertilizer is produced for every hectare of coffee production. This is a medium/dark roast that tastes like molasses, pie crust, and pecan, with woody and peppery notes in the background. Great for anyone who is looking for something more traditional to start the cold mornings.
